Fried Plantains Haitian Style By Lisa Anand

Ingredients

  1. Raw Plantain-1 kg
  2. Oil-400 gms for deep frying

For Dip, mix together

  1. Green coriander paste- 5 table spoons
  2. Olive oil-2 tablespoon
  3. Garlic paste-1 Teaspoon
  4. Onion paste-1 Teaspoon
  5. Salt- to taste

Method

Peel raw plantain and cut into 2 inch slices. Heat oil in a wok and deep fry the plantains till slightly browned. Remove from heat and press into discs and re fry till crisp on the outside. Serve with coriander dip.
